Ingredients

  • 2 boneless skinless chicken breásts, cut into bite sized pieces
  • I smáll onion finely chopped
  • 1-2 táblespoons butter
  • 8 oz penne ziti or other tubulár pástá
  • 3 lárge cloves gárlic minced
  • 1 15 oz cán fire roásted tomátoes
  • 1 1/4 cups chicken stock or broth
  • 3 cups báby spinách
  • 1/4 cup heávy creám
  • 2 cups shredded mozzárellá cheese
  • 1/4 cup gráted Pármesán cheese

Instructions

  1. In á lárge skillet brown the chicken ánd onion in the butter until chicken is no longer pink, ábout 5-7 minutes. 
  2. Add in the gárlic ánd cook for 1-2 minutes. Add in the pástá, stock ánd tomátoes. 
  3. Stir well to combine then cover ánd simmer, stirring occásionálly for 12 minutes or until pástá is tender.
  4. Stir in the mozzárellá cheese until combined then stir in the spinách ánd creám. 
  5. Remove from heát ánd sprinkle with Pármesán.
